The Dutch economy required vast amounts of salt, largely for preserving and seasoning herring. In a world without refrigerators and few flavourings, salt was indispensable. Salt was also used to preserve meat and other fish for longer storage. Dutch ships fetched salt from France, Spain, Portugal and the Caribbean. These ships are probably on the north coast of South America, the men are cutting away natural salt deposits with spades.
